I’ve been blessed with a daughter who is definitely not a fussy eater. Mind you, she does have her favourite meals but she’s willing to try new things. This is especially true when she’s involved in the preparation of meals. I enjoy spending time in the kitchen with her, seeing me prepare meals encourages her and she actively asks to help. To ensure that she can participate in meal prep, we make simple meals together once a week. One of our favourites is “homemade” pizza (“homemade” because I buy the dough vs. make my own). I’m going to tell myself that its healthier than ordering out! The main benefit I find with this activity is it’s a great bonding exercise. I can explain each step to her along the way and she feels confident knowing that she had a hand in making a meal that day.
There are 2 types of pizza that we make. We’ll either use English muffins sliced in half with pizza sauce, shredded cheese and pepperoni on the top or buy a pizza kit. For our most recent cooking adventure we used the pizza kit method.
HERE’S WHAT WE USED:
- 1 whole wheat flour pizza kit
- 1 1/2 cups of shredded Mozzarella cheese
- Half a package of salami
As per the pizza kit package, preheat the oven to 350 degrees Celsius. Lay the dough out on a pizza baking tin and cover it with the pizza sauce included in the package. Place the salami on top and cover with the cheese (this is Miss O’s favourite part!).
Place in the oven and bake for 20 mins or until crust becomes golden and cheese has melted.
Miss O loves vegetables so to balance out the meal I also steam broccoli or baby carrots for her.
Let the pizza cool and voila…dinner is served!
